Bánh Mousse bơ matcha là một món bánh tráng miệng được dùng lạnh, rất thích hợp vào mùa nóng. Không chỉ ngon, mà còn có màu sắc rất đẹp mắt và bổ dưỡng.
Dùng nước nóng hòa tan bột ca cao, tiếp tục thêm trứng, bột mì, bơ lạt, baking soda và đường vào khuấy đều. Đem hấp cách thủy 10 phút cho bánh chính hoàn toàn.
Bơ chính bỏ vỏ và hạt, lấy phần thịt bơ, trộn đều cùng whipping cream, bơ lạt và sữa tươi. Ngâm nở gelatin trong 10ml nước ấm. Tiếp tục thêm đường và gelatin đã ngâm vào bơ, trộn đều.
Đế bánh chính, để ngoài nhiệt độ thường cho bánh nguội hoàn toàn. Cho phần bơ đều lên mặt bánh. Đặt bánh vào ngăn mát tủ lạnh trong 20 phút giúp phần bơ đông đặc hoàn toàn.
Hòa bột matcha, gelatin với 50ml nước nóng, khuấy đều cho phần gelatin nở hoàn toàn. Thêm bơ lạt và whipping cream vào cùng với matcha. Lấy phần bánh có bơ đã đông đặc, tiếp tục cho toàn bộ phần matcha vào trên cùng. Đặt bánh vào ngăn mát tủ trong 20 phút cho đông đặc hoàn toàn.
Rang chính đậu phộng, bỏ lớp vỏ bên ngoài, đập dập rắc đậu và đường bột lên trên mặt bánh để trang trí và thưởng thức. Bánh Mousse bơ matcha sẽ ngon hơn rất nhiều khi dùng lúc bánh còn lạnh.
